Black Raw Beauty

Black Soya Beans (naturally fermented)

Naturally fermented RAW Soya Beans, like non-pasteurized Miso, are rich in Vitamin B12. Black soya beans are merely a variety of soya bean. Nutritionally, they are superior to regular yellow soy beans. Soya are high in fiber and protein, and relatively low in carbohydrate. The black beans have more phytonutrients (because they have more colour, which in many cases is produced by antioxidant phytochemicals).

The best of organic soya beans are used in this tasty product. The RAW beans are soaked, drained & sprouted, added unrefined sea salt. Then the beans are placed in a big ceramic pot, covered with wooden lid, and allowed to ferment naturally for 3 years using traditional method. The BEST ever RAW quality one can find in the world.

It's BEST to use this superior RAW quality Back fermented Soya beans in raw/living dressings and dishes yet it's NOT recommended to replace Miso in cooking.

Jelly Mushroom

Black Jelly Mushroom, aka Juda's ear mushroom. This jelly fungus is conspicuously ear shaped, ranging from purple to dark brown or black in colour with a rubbery texture, and most often found on elder trees.

Snow Jelly Mushrooms (also as white wood mushroom) is also a type of jelly fungus, is often used in Chinese and Japanese cuisine, especially in sweet deserts. This variety tastes more like jelly then mushroom. The fungus grows in frilly masses on trees and is off-white in colour and very translucent.

In traditional Chinese medicine, it is rich in many minerals & vitamins; and believed to be beneficial for healthy skin, hairs & the lungs. Scientist studies have proved friendly bacterias are benefical for us. So the same goes for friendly fungi.

Both fungi are often purchased dried and must be soaked before use. Now they're mostly cultiveted in large scale for used in cuisine for both savory and sweet dishes. While with no distinctive taste, it is enjoyed for its jelly-like texture as well as its medicinal benefits.
